Trattoria AD 1530 is a welcoming and vibrant restaurant located in the heart of Mdina, offering traditional trattoria-style cuisine including pizzas, pasta, grills, salads, and Mediterranean and Maltese-inspired dishes.
Xara Collection are seeking an enthusiastic and experienced Assistant Restaurant Manager to support the daily operation of our restaurant and help deliver exceptional guest experiences. This is an excellent opportunity for a hospitality professional with strong leadership skills and a passion for food, service, and people.
The Role
As Assistant Restaurant Manager, you will support the Restaurant Manager in overseeing daily restaurant operations, supervising service teams, ensuring operational excellence, and maintaining the high standards that define the Trattoria AD 1530 experience.
You will play a key role in coordinating lunch, aperitivo and dinner services, managing guest satisfaction, supporting team development, and ensuring compliance with company standards and legal requirements.
Key Responsibilities
Assist in the day-to-day management of restaurant operations
Supervise assigned shifts and ensure smooth service delivery
Coordinate reservations, group bookings, and guest flow
Support opening, closing, handover, and reporting procedures
Lead and motivate the team during service
Provide coaching, training, and support to team members
Handle guest feedback and resolve service issues professionally
Monitor service standards, grooming, and operational procedures
Assist with stock control, inventory checks, wastage control, and requisitions
Encourage upselling of food, beverages, desserts, and specials
Ensure compliance with HACCP, food safety, allergen, health and safety regulations
Maintain accurate operational records and reports
Report maintenance, stock, and operational issues as required
Requisitos
What We're Looking For
Minimum 2–4 years' experience in restaurant or hotel Food & Beverage operations
Previous supervisory or team leadership experience
Strong understanding of restaurant service standards and guest relations
Experience with POS systems, cash handling, stock control, and reporting
Excellent communication, leadership, and organisational skills
Strong problem-solving ability and attention to detail
Good command of English
Ability to work flexible shifts, including evenings, weekends, public holidays, and peak seasonal periods
Desirable
Additional language skills
Experience working in high-volume restaurants or hospitality venues
Valid Food Handler Licence in accordance with Maltese regulations
